Un borș tradițional de curcan savuros și acrișor, gătit lent cu pulpă de curcan fragedă, rădăcinoase dulci, tăieței de casă cu ou și aromatul leuștean proaspăt. O ciorbă reconfortantă pentru întreaga familie.

Meat preparation and boiling the soup
Wash the turkey meat and cut it into bite-sized pieces. Place the meat in a large pot with about 3 liters of cold water and a pinch of salt. Bring to a boil over medium heat and skim off the foam formed on the surface to obtain a clear broth.
Let the meat simmer over low heat, partially covered, for about 35-40 minutes, until the meat becomes almost tender.
Adding vegetables and noodles
Peel and finely chop the onion, and cut the carrots, celeriac, and parsnip into small cubes or thin strips. In a separate pan, gently sauté the vegetables in 2 tablespoons of sunflower oil for 3-4 minutes to enhance their color and aroma, then add them to the pot along with the diced red bell pepper.
Chef's tip
For an even richer flavor, simmer the turkey pieces with the bone in, then debone the meat before adding the noodles.
Borș is always boiled separately beforehand so as not to interrupt the cooking process in the pot and to keep the soup clear.
