Peel the yellow onions and slice them thinly (half-moons). Peel and finely crush the garlic cloves.
In a large, heavy-bottomed pot, melt the butter together with the extra virgin olive oil over medium heat. Add the sliced onions, sprinkle with the sea salt, and sauté for 20-25 minutes, stirring frequently, until the onions turn golden, soft, and nicely caramelized.
Cooking the soup with blonde beer
Add the crushed garlic and dried thyme to the caramelized onions, cooking for another minute until fragrant. Sprinkle the type 000 white wheat flour over the onions and stir continuously for 1-2 minutes to cook the flour.
Chef's tip
For a balanced flavor, choose a quality blonde beer, light or subtly craft-style, which brings delicate malty notes without pronounced bitterness.
You can replace the Gruyère cheese with Comté or aged Emmental for an equally authentic touch and a creamy melt.
