Preparing and browning the mushrooms
Clean the button mushrooms with a damp paper towel and slice them evenly. Set aside a few nice slices for garnishing. Finely chop the shallots and garlic cloves.
In a deep pot, melt the butter together with the olive oil over medium heat. Add the sliced mushrooms and brown them for 6-8 minutes, without stirring too often, until they develop a golden crust and release their rich aroma.
Aromatic base and simmering the soup
Add the chopped shallots, garlic, and thyme to the mushrooms in the pot. Sauté for another 2-3 minutes, stirring gently, until the shallot turns translucent and fragrant.
Chef's tip
For extra depth of flavor, you can combine white button mushrooms with cremini mushrooms or pre-soaked dried porcini.
Dijon mustard adds freshness and cuts through the richness of the cream; if you prefer a milder taste, start with just one tablespoon and adjust to your liking.
