In a small saucepan or using a kettle, bring 200 ml of water to a boil.

Place the couscous in a small bowl, mix it with a little salt, and pour the boiling water over it. Cover the bowl (e.g., with a plate) and let the couscous hydrate until it absorbs all the water.

Meanwhile, wash and cut the bell pepper into thin strips, peel the onion and cut it into fine rings, and peel and crush the garlic. In a pan, heat 2 tablespoons of oil over medium heat, then add the bell pepper, onion, and garlic. Sauté everything for 4-5 minutes.
Chef's tip
For extra freshness, you can add a little chopped fresh parsley or a few drops of lemon juice before serving.
