Preparation method

Clean and finely chop the onion and garlic. Wash the broccoli, cut the florets and clean the stem. Rinse the spinach and finely grate the cheddar cheese.

In a pot, melt the butter and sauté the onion together with the garlic. Add the flour and mix well to form a light roux.

Pour in the chicken broth and milk, add the broccoli stems and let it boil for 10 minutes, stirring occasionally.

Chef's tip

For a vegetarian option, you can replace the chicken broth with a concentrated vegetable broth.
