O salată de paste inedită și sățioasă, care îmbină textura pastelor integrale cu cartofii noi și prospețimea unui pesto cremos de busuioc făcut în casă. Adăugarea nucilor caju și a laptelui de cocos oferă o notă exotică și o consistență catifelată, în timp ce ouăle fierte aduc un plus de proteine. Este prânzul ideal, rapid și nutritiv, perfect pentru zilele active.
Preparation method
Basic ingredient preparation
Wash the new potatoes (keeping the skin on) and cut them into quarters. Place them in a large pot, cover with enough water (so that the pasta and beans can also boil later) and bring to a boil. After about 5 minutes, add the whole wheat pasta and boil over medium-high heat for another 10–12 minutes, until the pasta is ready. One minute before the end, add the green bean pods. Drain everything and rinse under cold running water.
In a small pot, place the eggs, cover them with water and boil for 7–8 minutes over medium heat. After boiling, cool them in cold water, peel them and cut them into quarters.
Pesto preparation and assembly
Meanwhile, in a tall container, blend the fresh basil, cashew nuts, coconut milk, salt, and pepper until smooth. Place the resulting pesto in the refrigerator until the rest of the ingredients are ready.
Chef's tip
For extra flavor, you can toast the cashew nuts in a pan for 1-2 minutes before blending them into the pesto.
