Bring the chicken broth to a boil in a large pot. Add the lemongrass (lightly crushed to release flavors), galangal, and kaffir lime leaves. Simmer for 5–7 minutes to allow the flavors to infuse.

Add the enoki mushrooms and halved cherry tomatoes. Simmer for another 3–4 minutes.

Stir in the red curry paste and fish sauce. Finally, add the peeled tiger shrimp – they only need 2–3 minutes to cook perfectly.

Chef's tip

If using whole shrimp, you can boil their heads in the broth at the beginning for an extra umami flavor, then strain the broth before adding the rest of the ingredients.
