Preparation method
Preparing and slicing the ingredients
Peel the yellow onions, cut them in half, and then slice them into thin strips (uniform half-moons). Crush the garlic cloves and mince them finely.
Cut the French baguette into diagonal slices about 1.5-2 cm thick. Crumble the Bleu d'Auvergne blue cheese into generous pieces.
Slow onion caramelization and reduction
In a large heavy-bottomed pot or cast-iron Dutch oven, melt 50 g of unsalted butter together with 30 ml of extra virgin olive oil over medium heat. Add the sliced onions and sprinkle with 5 g of sea salt.
Chef's tip
The secret to an outstanding French onion soup lies in patient caramelization: do not rush the heat, allow the natural sugars in the onions to develop slowly.
Bleu d'Auvergne cheese offers a fabulous contrast to the sweetness of the caramelized onions, adding rich creaminess and a distinct flavor profile typical of the Auvergne region.
