Sezamo
Preparation method
Preparing and roasting the grapes
Preheat the oven to 200°C. Wash the red grapes, remove them from the stems, and pat dry gently with a paper towel. Place them on a baking sheet lined with baking paper, drizzle with a tablespoon of olive oil, and sprinkle with a pinch of salt and pepper. Roast for 15-20 minutes, until the skins begin to burst slightly and their natural sweetness intensifies.
In the last 5 minutes of roasting, add the walnuts broken into medium pieces to the baking sheet, letting them toast lightly alongside the grapes to release their aromatic oils.
Cooking the lentils and the oriental dressing
Rinse the green lentils under cold running water. Bring to a boil in a saucepan with plenty of water and a little salt. Simmer over medium heat for about 20 minutes, until the lentils are tender but still firm and holding their shape. Drain the water and transfer the warm lentils to a large bowl.
Chef's tip
For an extra touch of balsamic flavor, you can drizzle the roasted grapes before serving with a few drops of balsamic vinegar or pomegranate molasses.
Green lentils or Puy lentils are ideal for this salad because they hold their texture when cooked and do not become mushy.
