PREPARING VEGAN "FISH" SAUCE
Start by preparing the sauce: put 55g of brown sugar, the chili flakes, 1 minced garlic clove, and 9g of salt in a bowl. Pour the boiling water over them, stir until the sugar dissolves, then add 24g of lime juice. Let the sauce cool.
PREPARING THE SALAD
Using a julienne peeler or a knife, cut the papaya and carrot into thin strips and place them in a large bowl. Cut the cherry tomatoes in halves and the green beans into 2-3 cm pieces.
In a large mortar, add the remaining garlic (1 clove), the red chili pepper, the remaining brown sugar (30g), and a pinch of salt. Pound them well until you get a paste. Add the cherry tomatoes, tamarind paste, and the previously prepared vegan "fish" sauce. Gently pound the tomatoes to release their juice.
Chef's tip
Be careful when cleaning the papaya fruit. It contains bitter seeds, and the flesh in the immediate vicinity of the seeds can also be bitter. Use only the firm part of the fruit.
