Ingredients

  • 30 g Dijon mustard
  • 30 g egg mayonnaise
  • 1 pinch of ground pepper
  • 1 teaspoon of salt
  • 8 slices of whole wheat toasted bread
  • 6 hard-boiled eggs
  • 2 ripe avocados
  • 80 g celery stalks
  • 15 g lemon juice
  • 2 large tomatoes

Instructions

    Finely chop the celery. Cut the avocado, remove the pit, and scoop out the flesh with a spoon. Then cut the flesh into 0.5 cm cubes.

    Cut the eggs in half, place the yolks in a bowl and mix them with mustard and lemon juice using a fork. Add mayonnaise and mix.

    Chop the egg whites and mix them with the mashed yolks.

    Add the chopped celery, sliced avocado, finely chopped chives, salt and pepper, and mix. Refrigerate until chilled. If necessary, season the spread with salt.

    Slice the tomatoes into 1 cm thick slices. Place a tomato slice on each slice of bread, then top with a portion of the spread.

    Instead of slicing the avocado, you can mash it with a fork. The spread will have a different texture. Or you can slice part of the avocado and mash the other part with a fork. You can add a few drops of Tabasco sauce to the spread.
