Ingredients
- 30 g Dijon mustard
- 30 g egg mayonnaise
- 1 pinch of ground pepper
- 1 teaspoon of salt
- 8 slices of whole wheat toasted bread
- 6 hard-boiled eggs
- 2 ripe avocados
- 80 g celery stalks
- 15 g lemon juice
- 2 large tomatoes
Instructions
- 1Finely chop the celery. Cut the avocado, remove the pit, and scoop out the flesh with a spoon. Then cut the flesh into 0.5 cm cubes.
- 2Cut the eggs in half, place the yolks in a bowl and mix them with mustard and lemon juice using a fork. Add mayonnaise and mix.
- 3Chop the egg whites and mix them with the mashed yolks.
- 4Add the chopped celery, sliced avocado, finely chopped chives, salt and pepper, and mix. Refrigerate until chilled. If necessary, season the spread with salt.
- 5Slice the tomatoes into 1 cm thick slices. Place a tomato slice on each slice of bread, then top with a portion of the spread.
- 6Instead of slicing the avocado, you can mash it with a fork. The spread will have a different texture. Or you can slice part of the avocado and mash the other part with a fork. You can add a few drops of Tabasco sauce to the spread.
