Preparing the Dressing and Fruits
Wash and dry the lime. Grate the zest on a fine grater, then cut it in half and squeeze the juice from one half. In a small bowl, mix the lime juice and zest, honey, vanilla extract, and a few finely chopped mint leaves (keep the rest of the mint for garnish).
Cut the mango along the pit on both sides. Peel it and cut it into cubes. Peel the kiwi, cut it in half, and then into slices. Wash the strawberries and blueberries. Cut the strawberries into quarters.
Pour the dressing over the fruits, mix well, and leave the salad in the refrigerator for 15 minutes for the flavors to meld.
Chef's tip
For extra texture, you can add some nuts or sesame seeds on top before serving. This salad is ideal as a breakfast or light snack.
