Rinse the lentils and cover them with water. Let them soak for at least an hour. Drain the water, add fresh water, and boil the lentils until almost tender (about 20 minutes).

Meanwhile, peel and dice the onion, carrots, parsley root, and celery into small cubes (the smaller they are, the shorter the baking time will be). Cut the cherry tomatoes in halves or quarters. Finely chop the garlic.

Preheat the oven to 190 °C (top and bottom heat).
Chef's tip
For extra flavor, you can add a little olive oil on top before putting the dish in the oven.
