Preparing the Tomatoes

First, score all the tomatoes in a cross shape at the base. Place them in a large bowl and pour hot water over them. Leave them for about 5 minutes, then easily peel them.

Cut the peeled tomatoes into quarters and remove the seeds from the inside (you can cut them out or gently squeeze them). Place the prepared tomato pulp in a food processor and blend until you get a coarse paste.
Cooking the Soup

Peel the shallots and garlic, then finely chop them.
Chef's tip
For a more intense flavor, you can toast the baguette slices in the oven with a little olive oil before adding them to the soup.
