Preheat the oven to 185–190 °C and prepare a 12-cup muffin tin.

Cut the tortillas into 4 equal parts (triangles). Place one triangle in each muffin cup, pressing gently to form a basket.

In a large bowl, mix the minced meat, eggs, finely chopped onion, 50 g of grated Gouda cheese, milk, cumin, chili, crushed garlic, freshly chopped coriander, salt, pepper, and breadcrumbs. From the resulting mixture, form 12 meatballs (approximately 65–70 g each) and place them in the tortilla baskets.
Chef's tip
You can serve the muffins with a spoonful of cold sour cream or a spicy salsa for added freshness.
