Ingredient Preparation
Start by draining and thoroughly rinsing the canned white beans under cold running water. Peel the garlic and crush or finely chop it. Wash the cherry tomatoes and cut them into quarters. Cut the bell peppers into thin slices.
Cooking the Vegetable Base
In a large pot, heat the olive oil over medium heat. Add the garlic and sauté for 30-60 seconds until fragrant, being careful not to burn it. Add the canned chopped tomatoes, fresh cherry tomatoes, dried oregano, and drained beans. Let everything simmer over low to medium heat for 10-12 minutes.
Finishing the Dish
Add the red bell pepper slices, lemon juice, and finely grated lemon zest. Let it simmer for another 5 minutes. Finally, add the fresh spinach leaves and cook for another 1-2 minutes until the spinach slightly wilts.
Chef's tip
For extra flavor, you can lightly toast the pita bread in the oven or on the grill before serving. If you prefer a spicier version, add a few chili flakes when sautéing the garlic.
