Preheat the oven to 185 °C. Peel the sweet potatoes and slice or grate them into very thin slices (approximately 2–3 mm). Peel the onion and garlic; finely chop the onion and finely grate the garlic.
In a bowl, mix the cottage cheese with the egg, one teaspoon of oregano, salt, and pepper. Set the mixture aside.
In a deep pan, heat 2 tablespoons of olive oil. Add the chopped onion and sauté for 2–3 minutes over medium heat. Add the grated garlic and sauté for another minute. Add the minced beef and cook for approximately 10 minutes, stirring occasionally. Add the thyme, rosemary, and peeled tomatoes (lightly crushed). Mix well and remove the pan from the heat.
Chef's tip
For a vegetarian option, you can replace the meat with finely chopped and sautéed zucchini and eggplant. Serve the lasagna after it has rested for 5-10 minutes to make it easier to cut.
