Preparation method
Heat a spacious pan over medium heat and add one tablespoon of olive oil.
Add the finely chopped onion and sauté for about 2 minutes, until it becomes slightly translucent. Meanwhile, cut the oyster mushrooms (100 g) and button mushrooms (150 g) into suitable pieces. Add the mushrooms to the pan and continue to sauté for another 3-4 minutes.
Drain the chickpeas and add them to the pan along with the chopped tomatoes, dried apricots, ground cumin, salt, and pepper. Reduce the heat to low, cover the pan with a lid, and let everything simmer for 8-10 minutes, until the flavors are perfectly blended.
Chef's tip
For extra freshness, don't omit the fresh coriander and lime juice at the end – these perfectly balance the rich flavors of the mushrooms and cumin. If you prefer a spicier version, you can also add a pinch of chili flakes.
