Cooking the Base and Clams

In a large pan, heat the olive oil over medium heat. Add the garlic and bay leaves and sauté for 1-2 minutes, until the garlic is lightly golden and fragrant.
Chef's tip
For extra flavor, you can add a splash of dry white wine to the pan immediately after adding the clams.
If you prefer a slightly spicy taste, add a pinch of chili flakes along with the garlic.
