Preparing the Sweet Potatoes
Peel the sweet potatoes, cut them into cubes, and boil them in lightly salted water until soft (approximately 15-20 minutes).
Drain the water and mash the sweet potatoes with an immersion blender until you get a smooth puree.
Cooking the Pasta and Sauce
Cook the rice pasta according to package instructions in salted water. Drain them, but reserve a little of the cooking water.
Chef's tip
For a more intense flavor, you can bake the sweet potatoes in the oven instead of boiling them. This will concentrate the natural sugars and provide a richer aroma.
If you want a completely lactose-free version, replace the cream with a plant-based alternative (coconut or soy) and use a vegan cheese suitable for melting.
