- 15 pcs of fresh mussels in shell
- 200 g of durum wheat spaghetti
- 6 pcs of fresh red cherry tomatoes
- 1 clove of fresh garlic
- 1 pc of fresh organic lemon (for zest)
- 2 tbsp of extra virgin olive oil
- 1 pinch of fine iodized table salt
In a deep pan, heat the olive oil and add the whole garlic clove. Add the thoroughly washed and cleaned mussels and start sautéing them over medium heat.
Add the quartered cherry tomatoes. Meanwhile, boil the spaghetti in salted water until al dente. About one minute before they are done, transfer the spaghetti directly into the pan with the mussels.
Add a little of the pasta cooking water and cook everything together for another minute so the flavors meld. Finally, sprinkle the grated organic lemon zest on top and serve immediately.
Chef's tip
Make sure the mussels are well cleaned of their 'beard' before cooking.
Use an organic lemon to avoid pesticides in the zest.
