Preheat the oven to 180 degrees Celsius.

Wash the Hokkaido pumpkin and cut it into larger pieces, then place them on a baking tray. It is not necessary to peel this variety.

Peel the garlic cloves and add them to the tray alongside the pumpkin.
Chef's tip
For extra flavor, you can add a few fresh sage leaves fried in a little butter on top of the risotto before serving. The risotto should have a fluid, 'all'onda' consistency, so don't hesitate to add a little more hot broth at the end if necessary.
