Grate the cucumber on the small grater* into a bowl, add a pinch of salt, and let it sit for 8–10 minutes, until the salt helps remove excess water.

Meanwhile, finely chop the mint and dill. Peel the garlic and crush it or pass it through a press. Put the chopped herbs and garlic in a medium-sized bowl.

After the time has passed, squeeze the grated cucumber well with your hands to remove all the water and add it to the bowl over the herbs and garlic. Add the Greek yogurt and mix everything well. Season with salt and lemon juice to taste, then mix again.

Chef's tip

For the creamiest result, use a full-fat Greek yogurt (10%) and make sure you have squeezed the cucumber very well.

Tzatziki is delicious with chicken skewers (souvlaki), baked potatoes, or warm Greek flatbreads.
