Sezamo
O salată principală caldă inspirată din bogăția bucătăriei libaneze, extrem de hrănitoare și plină de prospețime. Fasolea neagră bogată în fibre și proteine vegetale este sotată călduț cu ceapă rumenită, usturoi și chimion parfumat, apoi combinată cu roșii cherry dulci și o ploaie generoasă de pătrunjel și mentă proaspătă. Finisată cu un dressing catifelat de tahini și lămâie și decorată cu bobițe rubinii de rodie, această salată este prânzul perfect pentru zilele de toamnă.
Preparation method
Preparing the vegetables and aromatics
Rinse the black beans thoroughly under cold running water and let them drain completely in a sieve. Peel the red onion and slice it into thin strips, then crush and finely mince the 2 cloves of garlic.
Wash the plum cherry tomatoes and cut them into halves or quarters. Finely chop the fresh parsley and mint leaves, discarding the tough stems.
Warm pan-sautéing
Heat 2 tablespoons of extra virgin olive oil in a large skillet over medium heat. Add the red onion with a pinch of sea salt and sauté for 3-4 minutes, until translucent and lightly caramelized.
Chef's tip
If the tahini sauce becomes too thick upon contact with the lemon juice, gradually add a teaspoon of lukewarm water at a time and whisk vigorously until smooth and creamy.
For extra flavor and texture, you can serve the salad alongside toasted Lebanese flatbread warmed on a griddle.
