O supă de legume bogată și reconfortantă, pregătită cu un stoc de pui făcut în casă și îmbogățită cu zdrențe de ou tradiționale. Această rețetă combină dulceața morcovilor și a conopidei cu aroma intensă a verzei de Bruxelles, oferind un prânz sănătos și hrănitor pentru întreaga familie.   • 1/2 pc celery root (1/4 for stock, 1/4 for soup)
  • 4 pcs carrots (2 for stock, 2 for soup)
  • 2 pcs yellow onion
  • 500 g chicken carcass for soup
  • 2 dried bay leaves
  • 4 allspice berries
  • 4 black peppercorns
  • 1 teaspoon fine iodized table salt (plus a pinch for egg droplets)
  • 2 tablespoons sunflower oil (1 for stock, 1 for soup)
  • 1/2 pc fresh cauliflower
  • 2 pcs white potatoes for soup
  • 200 g fresh Brussels sprouts
  • 1 pc chicken egg size M
  • 30 g superior white wheat flour 000
  • 1 teaspoon ground cumin
  • 1 teaspoon ground black pepper
  • 1 bunch fresh green parsley

PREPARING THE STOCK

Start by preparing the soup base. Heat a large pot, drizzle with 1 tablespoon of oil and brown the chicken carcasses on all sides. Add 1/4 of the celery, 2 carrots and the 2 onions (roughly chopped), bay leaves, allspice, peppercorns, and 1 teaspoon of salt. Pour in 3 liters of cold water and simmer for 1.5 hours. Strain the stock.

PREPARING THE SOUP

Prepare the remaining vegetables: break the cauliflower into florets, cut the rest of the celery and potatoes into cubes, slice the other 2 carrots into rounds, and clean the Brussels sprouts. Sauté the carrots, celery, and Brussels sprouts in the remaining oil, add the potatoes and cauliflower, then pour in the strained stock. Boil for 20 minutes. Season with cumin, salt, and ground pepper.

EGG DROPLETS AND SERVING

Beat the egg with the flour and a pinch of salt. Pour the mixture through the tines of a fork into separately boiling water, boil for 1 minute, strain, and add to the soup. Serve with chopped fresh parsley.
