- 100 g wild garlic
- 50 g grated Parmesan
- 50 g pine nuts
- 100 ml extra virgin olive oil
- 1 tablespoon lemon juice
- 1 pinch ground black pepper
- 1 pinch iodized table salt

Wash the wild garlic leaves thoroughly and dry them with a paper towel. Place them in a blender and blend until finely chopped.

Add the grated Parmesan and pine nuts (which you can lightly toast beforehand for a more intense flavor). Blend again, gradually pouring in the olive oil until you achieve the desired consistency.

Finally, season to taste with salt, pepper, and lemon juice. The pesto can be stored in the refrigerator in an airtight jar, covered with a thin layer of olive oil.
Chef's tip
For a richer flavor, toast the pine nuts in a dry pan for 2-3 minutes until golden.
