Sezamo
O ciorbă oltenească de praz cu orez și borș, pregătită după rețeta tradițională de toamnă. Prazul fraged este călit ușor cu morcov, țelină și ardei, fiert molcom alături de orez și roșii pasate, apoi acrit desăvârșit cu borș aromatizat cu leuștean proaspăt. O mâncare caldă, curată și plină de savoare rustică.
Preparation method
Preparing the vegetables
Clean the leeks, wash them thoroughly under cold running water to remove any trace of dirt, and slice them into rounds approximately 1 cm thick.
Clean the carrots, celeriac, and red bell pepper, then dice them into small, uniform cubes.
Cooking the soup
In a spacious 3-4 liter pot, heat the 30 ml of sunflower oil over medium heat. Add the diced carrots, celeriac, and pepper, letting them sauté gently for 3-4 minutes until slightly translucent.
Chef's tip
For an even deeper flavor, boil the borș separately before adding it to the pot - this prevents the soup from turning cloudy and intensifies the flavor of the vegetables.
Lovage is the secret to any authentic Oltenian soup; adding it at the end, with the heat turned off, preserves its intense aroma and freshness.
