Cook the pasta in salted water according to package instructions until al dente. Drain and set aside.
Prepare the cheese sauce: In a saucepan, over medium heat, melt the butter. Add the flour and whisk for one minute until the mixture thickens slightly. Slowly pour in the milk and cream, stirring continuously to avoid lumps.
Add the Dijon mustard, smoked paprika, salt, and pepper. Gradually incorporate the Cheddar, Gruyère, and Parmesan cheeses, stirring until the cheese is completely melted and the sauce is smooth and homogeneous.
Chef's tip
For an even more intense flavor, you can use an aged red Cheddar.
