Ingredients
- one yellow onion
- 2 cloves of garlic
- 2 bay leaves
- a handful of thyme
- one carrot
- half a celery
Preparation method
- 1Wash the vegetable scraps thoroughly. Cut the onion in half.
- 2Place the vegetables, spices, and herbs in a pot and pour cold water over them.
- 3Add salt, bring to a boil, then reduce the heat to minimum.
- 4Let it simmer for at least 60–90 minutes, ideally longer for an intense flavor.
- 5Strain the resulting soup through a fine sieve.
