Ingredients

  • one yellow onion
  • 2 cloves of garlic
  • 2 bay leaves
  • a handful of thyme
  • one carrot
  • half a celery

Preparation method

    Wash the vegetable scraps thoroughly. Cut the onion in half.

    Place the vegetables, spices, and herbs in a pot and pour cold water over them.

    Add salt, bring to a boil, then reduce the heat to minimum.

    Let it simmer for at least 60–90 minutes, ideally longer for an intense flavor.

    Strain the resulting soup through a fine sieve.
