Beef Steak with Baked Potatoes and Coriander Mayonnaise

  • 4 pieces of Eye Round beef
  • 400 g Covasna potatoes
  • a few tablespoons of olive oil
  • a handful of rosemary
  • a handful of fresh coriander
  • 8 tablespoons of mayonnaise
  • juice from one lime
  • one garlic clove
  • one bell pepper
  • 2 tablespoons of butter
  • salt to taste

Marinate the steak with olive oil at room temperature, season with salt and pepper, and let it rest. Meanwhile, boil the potatoes for 10 minutes, then place them on a baking tray lined with parchment paper and gently crush them with a glass. Sprinkle with American potato seasoning, drizzle with olive oil, and sprinkle a little more American potato seasoning. If the spice mix already contains salt, do not add more salt. Bake at 220°C for about 10 minutes, until crispy.

Heat a pan well and brown the meat, then reduce the heat and cook it to a medium doneness, about 7 minutes on each side, depending on the thickness of the piece. Finally, remove the meat from the heat, place a cube of butter over each piece, and let it rest for 10 minutes.

Meanwhile, mix the mayonnaise with lime juice, a crushed garlic clove, and chopped coriander. The steak can be served whole or sliced thinly, alongside potatoes and mayonnaise.
