Preparing the Chicken

Preheat the oven to 180 °C and prepare a medium-sized ovenproof dish (approx. 15 cm x 20 cm).

Place the chicken breast in the prepared dish. Season with Herbs de Provence, chili flakes, salt, and pepper, ensuring the chicken is well covered. Distribute the sun-dried tomatoes over the chicken.
Preparing the Sauce and Baking

Peel the onion and finely chop it along with the parsley. Peel the garlic and crush it. Grate the mozzarella using a large grater.

If using sun-dried tomatoes in oil, drain them well before use to avoid excess fat in the dish.
