  • 1 kg of sushi rice
  • 100 ml of rice vinegar
  • 40 g of sugar 1
  • 20 g of salt 1

    Place the rice in a large bowl and pour cold water over it. Wash it thoroughly with your fingers, drain the water, and add fresh water. Repeat this process until the water remains clear (at least five times). This step is essential to remove excess starch.

    Place the washed rice in a pot, add 1.25 l of water, cover with a lid, and bring to a boil. Reduce the heat to minimum and simmer for about 25 minutes, until the rice is almost soft. Remove from heat and let it rest, covered, for another 10 minutes.

    In a small saucepan, mix the rice vinegar, sugar, and salt. Heat the mixture over low heat until the sugar and salt are completely dissolved. Be careful not to let the mixture boil! Let the resulting sauce cool.

    Transfer the hot rice to a large bowl (ideally a wooden one), pour in the cooled sauce, and gently mix with a wooden spatula, being careful not to crush the rice grains. While mixing, you can use a fan to cool the rice faster, which will give it a beautiful shine.
