Preparation method

Preheat the oven to 200–205 °C and prepare a silicone muffin tin (or lightly grease a classic one).

In a large bowl, crack the 8 eggs and beat them well with a whisk until smooth.

Wash the leek, cut it into thin strips, and add it to the bowl with the beaten eggs.

You can store the muffins in the refrigerator in an airtight container and quickly reheat them in the microwave for a packed breakfast.
