Preparation method
Preheat the oven to 195–200 °C. Prepare a baking tray (approx. 30 cm × 40 cm) and line it with baking paper.
Chop the broccoli in a blender until you get small pieces, the size of rice grains. If you don't have a blender, chop it very finely with a knife. Peel the garlic (use 2 cloves for the mixture and save one for the sauce) and grate it finely.
In a large bowl, mix the chopped broccoli, the 2 grated garlic cloves, eggs, whole spelt flour, dried marjoram, salt, and pepper. Mix the composition well until homogeneous.
Chef's tip
Serve the broccoli patties with a quick sauce made from fermented cream mixed with the third crushed garlic clove.
