Preparing the Pumpkin

In a pan, over medium heat, toast the pumpkin seeds without oil, stirring continuously until golden. Transfer them to a bowl and let them cool.

Preheat the oven to 180 °C.

Peel the pumpkin, cut it into cubes of approximately 2 cm, and place them in a bowl. Drizzle with 2 tablespoons of olive oil, add salt and pepper to taste, and mix well. Arrange the pumpkin cubes in a single layer on a baking tray and bake for 30 minutes. Let the roasted pumpkin cool.

Chef's tip

You will need an immersion blender to achieve a fine texture.
