Ingredients
- 90 g of spaghetti
- 15 g of olive oil
- 2 g of black pepper
- 20 g of salt
- 40 g of Pecorino cheese
- 100 g of shrimp
- 30 g of butter
Instructions
- 1Boil the pasta in at least 3 liters of boiling water, with 20 g of salt per liter, drain it and set it aside.
- 2Peel the shrimp, remove their heads, and cut them into 5 pieces.
- 3Heat the oil in the center of the pan over medium heat and add the shrimp. Cook for 1 minute. Add the sliced shrimp and let them fry, stirring frequently, for 1 minute. Add salt and most of the pepper, then add 40 ml of the pasta cooking water. Stir. Remove the shrimp and set them aside.
- 4Add the cooked pasta, pasta cooking water, cold butter cut into cubes, and Pecorino. Mix until the butter melts. Add the remaining pepper and chives and mix. Serve immediately.
