Start by preheating the grill well.

Wash and dry the trout. With a sharp knife, make 3 cuts on each side of the fish. Cut the lemon into 6 slices and insert them into the abdominal cavity of the fish, along with the sprigs of thyme and rosemary. Finally, season with salt and pepper and brush the fish with olive oil.

Place the trout on the grill and cook over high heat for 4–5 minutes on each side. After flipping them, you can cover the grill to cook evenly inside.

For extra flavor, you can use a special grilling basket, which will help you flip the fish without damaging its crispy skin. Serving with grilled zucchini perfectly complements the meal's nutritional profile.
