Rinse the basmati rice under cold running water, then cook it according to package instructions in water with a little salt. Once ready, let it cool slightly.

Wash and clean the vegetables. Cut the carrots into thin strips (julienne), the cherry tomatoes into quarters, and the iceberg lettuce into suitable strips.

Preparing the Chicken and Avocado Cream

Cut the chicken breast into small strips or cubes. Season it with salt and chili flakes to taste. In a hot pan with a little sunflower oil, fry the chicken for a few minutes on each side until golden and well cooked, being careful not to overdry it.

Chef's tip

You can replace basmati rice with brown rice or quinoa for a higher-fiber option.

If you want to save time, you can use leftover rotisserie chicken or previously cooked chicken.
