Wash the tomatoes and cut them into quarters or small cubes. Peel the red onion and chop it finely. Deseed the chili pepper (if you want less heat) and chop it very finely. Place all vegetables in a large bowl.

Drain the canned white beans, rinse them under cold running water, and add them to the bowl with the vegetables.

Add the finely chopped cilantro and oregano. Season with freshly ground black pepper.

Chef's tip

For extra texture and satiety, you can also add diced ripe avocado to the salad.

If you are not a fan of cilantro, you can replace it with fresh parsley, although the flavor will change from the original Mexican recipe.
