Preparation method

  • 1 tablespoon of Dijon mustard
  • 2 tablespoons of extra virgin olive oil
  • 1 fresh lemon (juice)
  • 200 g of canned tuna in its own juice
  • 1 fresh medium yellow onion
  • 1 fresh large red bell pepper
  • 1 fresh long cucumber (Fabio)
  • 1 fresh large tomato
  • 50 g of fresh cow's telemea cheese

In a large bowl, mix the Dijon mustard, olive oil, lemon juice, and tuna in its own juice (along with the liquid from the can). Season with salt and pepper to taste.

Peel the onion and cut it into thin rounds. Core the bell pepper and cut it into cubes, along with the cucumber and tomato. Add all the chopped vegetables to the bowl, over the tuna mixture, and mix well.

Distribute the salad onto 4 plates. Crumble the telemea cheese finely over each portion and serve immediately.

Chef's tip

For extra flavor, you can add a few green or black olives and a little dried oregano.
