Preparing the rice
Rinse the sushi rice well under cold running water until the water runs almost clear. Add the water, cover, and bring to a boil. Once it starts boiling, reduce the heat to low and cook for 15 minutes without lifting the lid. Remove from heat and let it rest for another 10 minutes.
Meanwhile, prepare the rice dressing. In a small saucepan, mix the rice vinegar, sugar, and salt. Warm gently until the sugar and salt are completely dissolved, then let the mixture cool slightly.
Transfer the warm rice to a bowl and gently fold in the dressing. Let it stand for 5 minutes, then cool to room temperature, stirring occasionally. The rice should be pleasantly sticky, hold its shape, and have distinct grains.
