Finely chop the garlic and yellow onion.

Crumble the feta cheese by hand into larger pieces and set aside. Cut 1 chili pepper lengthwise, remove the seeds, and finely chop the flesh. Finely chop 40 g of green olives.

In a large bowl, mix the minced meat with the onion, garlic, chopped chili pepper, chopped olives, breadcrumbs, mint, salt, and pepper. Let the mixture chill in the refrigerator for 20 minutes. Then, divide the meat into 8 equal portions and form each into a flat patty.

Chef's tip

For a finer salsa texture, you can coarsely blend the olives, green onion, chili pepper, lemon juice, and olive oil with an immersion blender, then mix with the rest of the ingredients.

You can adjust the amount of chili pepper according to your preference or omit it completely for a milder version.
