O salată italiană generoasă și plină de culoare, perfectă pentru un prânz sățios de toamnă. Pastele orzo delicate se combină excelent cu felii de salam rumenit și crocant, perle proaspete de mozzarella, roșii cherry dulci și măsline aromate, totul învăluit într-un dressing balsamic cu oregano.

Boil the orzo pasta in salted boiling water according to the package instructions (about 8-9 minutes) until al dente. Rinse briefly under cold running water to stop the cooking process and drain very well.
Cut the sliced salami into thin strips or small pieces. Heat a dry pan over medium heat and brown the salami for 3-4 minutes until golden and crispy. Remove the crispy salami pieces onto a plate lined with paper towels to absorb excess fat.
Halve the plum cherry tomatoes, dice the red bell pepper into small cubes, and drain the fresh mozzarella (if using large balls, tear or cut them into bite-sized pieces).
Chef's tip
For extra texture, you can also add a few walnuts or pine nuts lightly toasted in the same pan after the salami.
The salad keeps wonderfully in the refrigerator for up to 2 days if you store the arugula and crispy salami separately and add them right before eating.
