Ingredients

  • 60ml of olive oil
  • ½ teaspoon of red wine vinegar
  • Pepper to taste
  • Salt to taste
  • 2 large slices of bread
  • 400g of tomatoes
  • 10 g peeled red onion
  • 30 g thinly sliced Parmesan
  • 1 peeled garlic clove
  • 5 large basil leaves

Preparation

    Finely chop the onion. Tear the basil into smaller pieces.

    Discard the core of the tomatoes and cut the pulp into 0.5 cm cubes. Place the tomatoes in a bowl, add onion, salt, pepper, basil, vinegar, and olive oil, then mix.

    In a pan, over medium heat, toast the bread until both sides turn golden. While still warm, rub a clove of garlic over them, then add the tomato mixture and grated Parmesan.
