Preparing the mixture

Start by preparing the vegetable mixture. Place all ingredients (drained chickpeas, finely chopped cabbage, onion, garlic, eggs, oat flour, salt, and pepper) in a food processor or electric chopper. Blend until you get a homogeneous and smooth mixture.

Frying the schnitzels

Heat 2 tablespoons of olive oil in a pan over medium heat. With wet hands, form flat patties or schnitzel-like shapes from the mixture.

Place them in the pan and fry for 2-3 minutes on each side until golden and crispy.

Chef's tip

Serve these vegetarian schnitzels with a spoonful of full-fat sour cream and a little fresh chopped green onion or chives on top.
