  • 180 g of carrot
  • a handful of green onion
  • 50 g of white flour
  • 2 eggs
  • one garlic clove
  • a few thyme leaves
  • salt to taste
  • pepper to taste
For the sauce
  • 150 g of semi-skimmed cottage cheese
  • one garlic clove
  • a pinch of salt
  • a handful of parsley

Peel and finely grate the carrots. Place them in a bowl and add the finely chopped green onion, a crushed garlic clove, thyme leaves, eggs, and flour. Season with salt and pepper, then mix everything until you get a compact and sticky dough.

Heat a pan with enough oil. When it's hot, add spoonfuls of dough and form fritters. Fry them on both sides until golden and well-cooked, then remove them to a plate lined with paper towel to absorb excess oil.

Mix the cottage cheese with the crushed garlic and finely chopped parsley. Season with salt and homogenize.
