Preheat the oven to 160 °C.

Generously season the meat with salt and pepper on all sides. Peel the carrots and celeriac, then cut them into cubes of approximately 2 cm. Cut the onion in half lengthwise, then into 0.5 cm thick slices. Remove only the first thin layer of skin from the garlic heads and cut them in half lengthwise.

In a hot pan over high heat with oil, brown the meat on all sides until golden. Remove the meat and place it in an oven-safe pot.
Chef's tip
You will need an oven-safe pot with a lid. If you don't have one, use a baking dish and cover it tightly with aluminum foil.
Use a potato peeler to cut only the orange part of the orange peel. Avoid the white part, as it is bitter.
