Ingredients

  • 1 tablespoon of sugar
  • 1 teaspoon of honey

  • A little pepper
  • A little chili
  • Herb sauce (dip)

  • 2 large red onions
  • 2 tablespoons of yogurt
  • 150 g of Cow's milk cream cheese
  • A bunch of chopped parsley leaves
  • Half a clove of garlic
  • A sprig of thyme
  • 200ml Cognac
  • A drop of olive oil

Burger

  • 2 pieces of halloumi cheese
  • 1 tomato
  • A bunch of chopped fresh herbs
  • 2 burger buns
  • 2 iceberg lettuce leaves
  • 2 pickled cucumbers

Preparing the Onion Chutney

    Peel the onion and cut it in half, then into thin slices.

    Put the olive oil in a deeper pan and let it heat up. Fry the onion in oil until translucent. Add a tablespoon of sugar to the pan. When the sugar caramelizes slightly, add the cognac and leave on the heat until the alcohol evaporates.

    Then add the rest of the spices and let it simmer at a lower temperature until the liquid has reduced by half. Finally, mix with a teaspoon of honey and remove from heat, adding salt to taste.

Preparing the Herb Sauce (Dip)

    Mix the ingredients for the sauce and season to taste. Refrigerate the sauce.

    Brush the halloumi cheese with olive oil and sprinkle with dried thyme. Place the cheese on the grill and grill until slightly browned.

    Cut the buns, brush one side with olive oil and let them brown slightly on the grill.

    Spread the bottom half of the bun with the prepared sauce, place a lettuce leaf, then the grilled halloumi cheese, add a slice of tomato and a few pickle slices. Add the Onion Chutney on top. Place the burger, then add the remaining sauce, and finally the other half of the bun.
