Preparing the Onion Chutney

Peel the onion and cut it in half, then into thin slices.

Put the olive oil in a deeper pan and let it heat up. Fry the onion in oil until translucent. Add a tablespoon of sugar to the pan. When the sugar caramelizes slightly, add the cognac and leave on the heat until the alcohol evaporates.

Then add the rest of the spices and let it simmer at a lower temperature until the liquid has reduced by half. Finally, mix with a teaspoon of honey and remove from heat, adding salt to taste.
