Ingredients

  • 150 g blanched edamame
  • 1 medium carrot
  • 100 g red cabbage
  • half a cucumber
  • 2 tablespoons roasted peanuts
  • a handful of fresh cilantro

Dressing

  • 2 tablespoons peanut butter
  • 1 tablespoon soy sauce
  • 1 tablespoon lime juice
  • 1 teaspoon honey
  • 1 tablespoon sesame oil

Instructions

    Cut the carrot into thin strips (julienne), shred the red cabbage, and finely slice the cucumber.

    In a bowl, whisk the peanut butter with soy sauce, lime juice, honey, sesame oil, and water until it becomes a creamy dressing.

    Combine the edamame, carrot, cabbage, and cucumber in a large bowl.

    Pour the dressing over and mix until well coated.

    Roughly chop the peanuts and cilantro and sprinkle them on top before serving.
