Dough Preparation
Wash the organic orange thoroughly, possibly using a brush, and rinse it with hot water to remove any wax residue. Finely grate the orange part of the peel.
Sift the flour together with the cocoa, baking powder, and 70 g of powdered sugar into a large bowl.
Add the lightly beaten egg, soft butter, orange zest, and one teaspoon of orange juice. Knead until you get a homogeneous dough, which will be quite sticky. Wrap the dough in cling film and leave it in the refrigerator for at least 2 hours.
Chef's tip
For a special visual effect, roll the dough balls in powdered sugar twice before baking. This will ensure a strong contrast between the dark interior and the white, cracked crust. They keep perfectly in an airtight metal tin for up to one week.
